Know Your Ingredient: Wheat flour

Spiced Atta Cookies made from whole wheat flour are filled with the goodness of clove, cinnamon and ginger, all of which are known to be having medicinal properties and aids in building immunity. These are also enriched with coconut oil, which not only adds a nice nutty flavour to the cookies but also makes it a healthy option.

Ingredients:

½ cup cold pressed virgin coconut oil

½ cup sugar

¼ cup honey

1.5 cups whole wheat flour

½ cup almond flour/powdered blanched almonds

½ tbsp cinnamon powder

1 tsp ginger powder or grated ginger

1 tsp ground clove

½ tsp baking soda

¼ cup milk

Procedure:

  1. Keep all the ingredients ready.
  2. Cream oil and sugar using an electric beater. Stir in the honey.
  3. Combine flour, almond powder, cinnamon, ginger, clove, baking soda in a separate bowl.
  4. Gradually stir in the dry ingredients into the butter mixture. Add milk and knead everything to make a soft but not sticky dough.
  5. Cover the dough for 10 -15 minutes. Divide it into 2-3 portions and roll each portion into a “chapati sized’ big disc. Use a cookie cutter on each disc to cut the pieces into desired shapes.
  6. Grease a baking tray. Place the cut pieces on it and bake at 180 degrees Celsius for 10 minutes (It will make two batches of cookies with one batch equalling to around 15 cookies, if using a medium sized cutter).
  7. Once the cookies are baked let it cool and then store in an air tight container. Enjoy as a snack or with tea/coffee.
