Know Your Ingredient: Strawberry

Strawberries are not only perfect mood enhancers, juicy and delicious but are also packed with vitamins, fibre and very high levels of antioxidants. These are sodium-free, fat-free, cholesterol-free and low in calories. The benefits of strawberries are endless. In short, they pack a healthy punch!

Parfait (pronounced with a silent t) means perfect in French, which is also a frozen dessert that has its origin in France. Today there are umpteen versions and varieties of parfaits available. The most common is the yogurt parfait which is served in a parfait glass with layers of yogurt, chia seeds, muesli/granola and seasonal fruits. In fact, there is no rule or standard recipe to make one. You can play around with the ingredients and layer it up in whichever way you want. As per Wikipedia the oldest known recipe of parfait dates back to 1892. Needless to say, this is something that has truly passed the test of time.

Recipe
Preparation Time: 15-20 minutes
Makes around: Two large dessert glasses/bowls
Ingredients:
Hung curd :200 gms
Fresh strawberries: 14-16
Jaggery powder: 5-6 tbsp
Soaked chia seeds: 4 tbsp
Any muesli/granola: 4 tbsp
Parsley or Mint leaves to garnish

Procedure
1. Keep all the ingredients ready.
2. First prepare some fresh strawberry compote using around 8-9 (or as much you want)
strawberries and jaggery powder by placing the sliced berries in a thick bottomed wok/pan. Add jaggery powder on top of it and let it cook, stirring continuously till you get a jam like consistency. Turn off the flame and let it cool for some time.
3. Chop and slice the remaining strawberries in the meantime.
4. Once, the strawberry compote is cool enough, take out a dessert glass/jar/bowl and arrange all the ingredients, i.e., muesli/granola, hung curd, soaked chia seeds, strawberry compote, strawberry slices, chopped strawberries in layers one after the other. Garnish with mint/parsley leaves and it’s done!
