Know your ingredient: Rawa

Rawa/ Sooji/Semolina is a course flour made up of Durum Wheat. It is a rich source of iron, B vitamins and dietary fibres and supports weight management, heart health and digestive system.

Rawa Dhokla Recipe

Preparation Time: 15-20 minutes

 

Ingredients:

For Dhokla Batter

2 Cups Rawa/Sooji

1 ½ cup of water (or as required)

1 tsp sunflower oil

A small inch of ginger (crushed/grated)

1-2 green chillies (crushed)

¼ tsp turmeric powder

¼ to ½ tsp sugar

1 small (5 grams) sachet of Eno (fruit salt)

Salt as per taste

Juice of 1 medium-large sized lemon

For Tempering the Batter:

1 tbsp sunflower oil

½ tbsp mustard seeds

½ tbsp cumin seeds

½ tbsp white sesame seeds

Some green curry leaves

Pinch of asafoetida/hing

2-3 tbsp water

2 green chillies (de-seeded and half slit)

For Garnish:

Chopped coriander leaves

Sufficient for:  four adults

Procedure:

  1. Keep all the ingredients ready.

For Dhokla Batter:

  1. Grease the steamer plate.
  2. Mix Rawa, oil, crushed ginger and green chillies, sugar, turmeric powder, salt, lemon juice, water.
  3. Now add Eno and mix everything properly.
  4. Immediately after adding Eno, transfer the batter to the greased steamer plate.
  5. Steam the dhokla batter for 10-15 mins or until done.

For Tempering:

  1. Heat oil. Add mustard seeds, cumin seeds, sesame seeds and hing.
  2. Once the mustard seeds splutter, add in curry leaves and green chillies.
  3. Now add water and cook for a while.
  4. Spread the tempering over the steamed dhokla.
  5. Garnish with coriander leaves.
  6. Cut the dhokla to desired shape.
  7. Serve the soft and spongy rawa dhokla with green chutney.
